Leg Of Lamb - Oven Baked

This is a Dinner for you and 8- Family members or close Friends, maybe for 4th. of July! 

Get a fresh, never frozen Gigot of Lamb (from New Zealand). Prepare your ingredients: Olive Oil, Delicious Noise, chopped fresh Rosemary, Mustard, diced Carrots, Tomatoes, an Onion spiked with 2 or 3 cloves, some Beef Stock and Red Wine. Prepare your Ceramic baking dish [soak it in cold water 30 min.], find some of the muscle pockets on the leg and stuff it with the whole Garlic Cloves. Marinade it with your Olive Oil, give it into the Dish and sear it on all sides. then add the Red Wine, the Beef Stock, the Spices and the Carrots and the Onions. Now put the covered Dish into the "cold" oven, set it for 356 F. and roast it for 1 hour / per pound of meat (i.e. 3 hours for 6 pounds or as it applies). 1 hour before the Roast is done, add your Tomatoes, then approximately 30 min. before the Roast is done, uncover the Dish to give it a nice golden brown look. This goes best with a nice and creamy Potato Gratin..,
